Vegan Deluxe Mix Loaf... My Kinda Sticky Date Pudding!


This is what I like to call... THE SNACK HACK! Yes I've transformed my very own Deluxe Mix snack into a brand spanking new delectable slice of goodness!

While I was out getting my morning coffee yesterday, I spotted some freshly baked banana bread in the corner of my eye. The salivation begun and I contemplated asking if it was gluten free. Then I realised I only had $5 in my wallet and it was a cash only cafe... coffee it was.

As I walked back home I couldn't help but notice the abundance of muffins, cakes and slices starring at me from inside all of the cafes. It was official, I was having some serious baked goods cravings!

My leisurely stroll turned into an aggressive power walk as I scurried home while semi-planning in my head what glorious, healthy baked creation I could whip up myself.

To be honest, I couldn't be bothered to head out to the shops again to attain additional ingredients, nor do I ever cook with a recipe because... that's literally my worst nightmare. I wanted a healthy baked treat and I wanted it NOW!

This sisters... is how I created the intensely gooey, dense, delectable, rich, sweet and glorious Vegan Deluxe Mix Loaf!! Aka... throw everything I have into a bowl, mix it all together and pray that something edible exits the oven.

p.s. Remember all of my baking is extremely rustic, flexible and... frivolous. Like I said, I literally threw all of these ingredients into a bowl so the below quantities are... kind of estimations. Feel free to dabble with quantities and ingredients to make the loaf suit your taste buds!


Sarah's Day x Loving Earth Deluxe Mix

1.5 cups buckwheat flour

1/2 cup blanched almond meal

1Tbsp vanilla bean powder

1Tbsp cinnamon

1tsp Pink Himalayan Salt

1tsp Baking Powder

1.5Tbsp Tapioca Starch

1 flax egg

2Tbsp chia seeds soaked in almond milk (so it's a gel)

almond milk as needed

1/2 cup Agave Nectar (or liquid sweeter of choice)

2 ripe bananas

2 Tbsp melted coconut oil



Before we start, make sure you've made your flax egg and soaked your 2Tbsp of chia seeds. This is going to work as our 'egg' in this mixture!

Mash two bananas into a mixing bowl and then... ADD EVERYTHING ELSE!

See I told you I was a rustic, flexible, YOLO kind if baker! Basically you want the mixture to be a thick, gooey, muffin-like batter that tastes pretty sweet! Remember, it always tastes sweeter in the raw mixture, than it does once cooked! To be honest... I added quite a bit of agave nectar!

Add as much Deluxe Mix as you want, it really depends how much texture you enjoy in your loaf! I also added some chopped dup dried fig because... I love figs... I'm deep like that.

Place into a non stick or silicone loaf pan and begin cooking in the oven on 180 celsius! After around 10 mins, or until the top of your loaf has begun to cook, take it out of the oven and... STAB it with a fork multiple times. Pour an additional 1/2 cup of agave nectar (or your chosen liquid sweetener) over the loaf, allowing it to soak into the holes. This is going to ensure your loaf is nice gooey and sticky! Kind of like sticky date pudding!

Place your loaf back into the oven and allow it to cook until golden brown, gooey and bubbly. (I think this was around 25mins later).

Remember, this is a pretty dense loaf so I like to eat it hot! You can totally toast it, but I had it for morning tea today and heated it on the grill to the outside became crunchy and golden! Oh my gosh this was so yummy, you're going to LOVE IT!!
