Cinnamon & Apple Baked Donuts

Serves 18 donuts

Ingredients:

Wet Mixture

  • 2 eggs (room temp)
  • ¼ cup + 2 Tbsp brown sugar
  • ¼ cup maple syrup
  • 1 cup pure apple sauce/puree
  • ¼ cup melted coconut oil
  • 1 tsp apple cider vinegar

    Dry Mixture

    • 1½ cups gluten free flour 
    • ⅛ tsp salt
    • ½ tsp ground cinnamon
    • ½ tsp bicarb soda
    • ½ tsp baking powder

    Glaze

    • ½ cup icing sugar
    • sprinkle of cinnamon (to taste)
    • dash of dairy free milk (as needed)

      Method:

      Preheat oven to 175°C fan-forced

      1. Add all wet ingredients to a large bowl and mix together using an electric mixture until smooth
      2. Sift in all dry ingredients then on low, beat together with the electric mixer until well combined
      3. Grease donut moulds with coconut oil
      4. Add donut mixture to a piping bag or large zip lock bag and snip off the corner (to create your own make-shift piping bag) and pipe even portions of the mixture into 18 moulds
      5. Bake in the oven for 14-16 minutes. Remove from the oven and allow to completely cool
      6. Meanwhile, prepare your glaze by whisking icing sugar and cinnamon together in a shallow bowl (sift together if you prefer) then adding small dashes of milk until you're left with a thick yet runny sugar glaze
      7. Once donuts have cooled, gently dunk each into the shallow bowl of glaze and serve!
      8. If storing these away for later, I like to consume within 3 days and heat up in the microwave before enjoying
